Creamy White Chili

I can across this recipe on the Taste of Home website and decided it was worth a shot, especially with the weather being all snowy and cold. It definitely is worth a try if your into soups and chilis. It was pretty easy to make and sooo delicious!

1 lb boneless skinless chicken breasts, cut into 1/2" cubes
1 medium onion, chopped
1-1/2 tsp garlic powder
1 Tbls canola oil
2 cans (15-1/2 oz each) great northern beans, drained and rinsed
1 can (14-1/2 oz) chicken broth
2 cans (4 oz each) chopped green chilies
1 tsp salt
1 tsp cumin
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1 cup (8 oz) sour cream (I've used plain yogurt as well)
1/2 cup whipping cream

In a large saucepan, saute the chicken, onion, and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
Remove from heat; stir in sour cream and cream.

Yield: 7 servings

  1. Looks good Sadie! I'll have to try that one! We still need to get together! We just moved down this week but trust me, we'll be coming up plenty (my mom is making me.) so we need to do get together again!
